Stracciatella ice cream recipe of 17-04-2013 [Updated on 06-03-2017]

Stracciatella ice cream is a simple variant of fiordilatte ice cream to which you add chopped dark chocolate at the end of the preparation. Even if it is only an ingredient to be added, it gives a decidedly stronger flavor to the ice cream and makes it even more greedy, while maintaining the lightness of a compound made without eggs;) Try both flavors and then let me know :)


How to make stracciatella ice cream

In a saucepan, heat the milk with the cream, sugar and vanilla pod

As soon as the sugar has dissolved completely, lift the vanilla pod and pour the contents into a container. As soon as the liquid has cooled, put in the fridge to cool for at least 4 hours

Now pour the cold mixture into your ice cream maker and set it as per the manual.

If you have the Kitchen Aid ice cream maker, put the butterfly, pour the contents into the ice cream maker that you have kept in the freezer for 12 hours and start it at speed 1, working the ice cream for 15 minutes. Now chop the dark chocolate and add it to the ice cream maker and let it go for another 3/5 minutes

When the ice cream is thick and creamy it will be ready to be served

You can serve the stracciatella ice cream immediately in bowls or put it in a tray and store it in the freezer.

Stracciatella gelato: the recipe and the first Proustian memoir

On the other hand, I have a proustian memory and gelato is linked to past memories, emotions, feelings. Gelato has always been the uncontested symbol of summer. There was the after-beach gelato, as well as the after-dinner and the snack gelato. As a grown-up, in particular during my college time, I instituted gelato for lunch, along with a portion of fresh fruit salad.

My favorite flavor when I was a child was coconut. I had a fixation with any food containing coconut: coconut cookies, coconut cakes, not to mention fresh coconut. I found it reassuring. Coconut was so exotic to make me dream about foreign oceans, white beaches and blue lagoons.

I then evolved towards flavors as stracciatella and crème caramel, without disdaining great classic as strawberry and chocolate, tough. Maturity and, ahem, wisdom had refined my taste buds. I thus became a fan of the apparently simple and timeless hazelnut and pistachio flavors.

Currently, I am oriented towards classical creams. The flavors hazelnut and pistachio are my reference standards to assess any gelato shop. I now order “hazelnut and pistachio” with the same frown of the critic of Ratatouille. But I immediately surrender to the rich taste of Langhe’s hazelnuts or to the salty touch of Bronte’s pistachios.

And so today, I leave you with my first Proustian memory:

Stracciatella ice cream

(Doses for 4 persons)

  • 375 mL of whole milk
  • 80 mL of fresh cream
  • 150 g of sugar
  • 100 g of dark chocolate chips
  • 1 teaspoon of vanilla extract

Pour all the ingredients in the gelato maker, with the exception of the chocolate chips that must be added in a second time. Close and activate the paddle, without cooling down. Stir, till the sugar will be completely dissolved. Now, activate both paddles and cooling, and let the machine stir for about 10-15 min. After this time, stop the machine and add the chocolate chips. Close the machine and start the stirring + cooling for other 15 min. After this time, gelato should have solidify. Stop the gelato maker, extract the bowl and cover it with aluminum foil. Let the gelato rest in the freezer for 7-8 h, before serving.

HOW TO PREPARE Stracciatella Gelato Without Ice Cream Maker
  1. Put a bowl of aluminum in the freezer for at least two hours.
  2. Chop the chocolate in a mixer and set aside.
  3. Stir in the sugar, milk and cream with whips, mixing well.
  4. Pour in the mixture in the cold bowl and place in the freezer.
  5. After an hour stir the ice cream and add the chopped chocolate.
  6. Store the ice cream in the freezer.
  7. Repeat the operation two more times.
  • You will repeat the process several times of mixing and the more the ice cream will be creamy.
  • You can decide whether to chop the chocolate more or less finely according to your taste.

The ice cream saga continues with the second flavor I prepared a few days ago: stracciatella! Who doesn't like stracciatella? A creamy fiordilatte ice cream enriched with delicious pieces of chocolate. children are crazy about it, even if for them any derivative of milk is a pleasure ice cream, yogurt and even some types of cheeses, I always have to have the fridge full, otherwise they complain that there is nothing for a snack, even if I may have prepared a nice sweet for them. like the other day I thought it would be a good idea to prepare a nice Chiffon cake for both a snack and breakfast, and what about them?
"But there's nothing for a snack!"
I could have throttled them. -)))
This recipe comes directly from the recipe book of my Girmi ice cream maker.


chocolate flakes (I made with milk, but dark too, I put about 50 gr, half a bar)

Dissolve the sugar in the milk, then add the cream, pour into the ice cream maker and whisk until the ice cream reaches the right consistency (about 40 minutes).
When almost finished, add the chopped chocolate previously with a knife.

Some advices:
- if you omit the chocolate flakes, you get the fiordilatte in fact, in the recipe book of the ice cream maker the two ice creams have the same doses, only this has the addition of chocolate. obviously!
- the colored sugars that you see in the picture I put them only on top, just to make the cup prettier.
- do not be in a hurry, rather let the machine work a couple of minutes more, because otherwise once transferred to the cup or glass it will melt more quickly!
- while the machine is working, put the cups or glasses (or a large container) in the freezer so that they freeze well so the ice cream will have less thermal shock.

How good is the stracciatella ice cream.
Convenient the Kenwood Chef? Can the ice cream basket be bought separately? I have the Chef Classic, I use the Thermomix for ice cream. I have to try .. Thanks dear for the delicious recipe !!

I am happy with the kenwood chef and the ice cream basket I bought it later and then I got the cantrifuga. It's convenient because the basket is always in the freezer and so it doesn't take up space around)

Stracciatella Ice Cream Recipe

  • 500 gr of whipping cream type hoplà already sweetened (or fresh liquid cream + 2 tablespoons of icing sugar or cream powder of cameo dosed with milk for a final total of 500 gr)
  • 400 grams of condensed milk
  • 2 tablespoons of liquid vanilla extract (or the seeds of 1 berry or 1 sachet of vanillin + 2 tablespoons of Gran Marnier or Rum)
  • 100 gr of dark chocolate (or chocolate chips)


Put the whole milk and liquid fresh cream.

Add it sugar and mix with a spoon.

Put the saucepan over low heat and stir for 2 minutes so that milk and cream warm up and it sugar melt.

Turn off the heat and leave it cool completely.

When the mixture will be totally cold add the chocolate chips.


Put the compound in the ice cream maker and operate it for about half an hour until the ice cream is ready.

Remove the ice cream from the ice cream maker and place it in a container in the freezer for about 1 hour.

Take out the ice cream stracciatella at least 20 minutes first from the freezer before serving.


If you don't have an ice cream maker, whip the mixture for a few minutes then put it on WITHOUT THE CHOCOLATE DROPS in a shallow bowl and in the freezer for about 3 hours, stirring each 30 minutes so that ice crystals are not created.

Add the chocolate chips and turn with a spoon then put in the freezer again for another 30 minutes.


You can also use the vegetable cream.

For the process without ice cream maker, do not add the chocolate chips immediately otherwise they will all remain on the bottom, add them when the ice cream has already took consistency.

If you want you can join to the ice cream mixture also a sachet of vanillin or the internal seeds of a vanilla pod.


Since there is also the milk in addition to the cream you will see that it will NOT whip when you go to whip it with the electric whisk but it will become a fairly frothy mixture.

You can also use vegetable cream.

If you want, you can also add a vanillin sachet or the internal seeds of a vanilla pod to the cream ice cream mixture.

a unique delight. an indescribable creaminess! I fell in love with this ice cream!
75 gr of fabbri ice cream mix
50 grams of sugar
350 grams of whole milk
125 ml of hulalà cream
kroccant blacksmiths

it's that simple. I followed the instructions of the preparation (also achievable without ice cream maker)
I combined the preparation with the sugar and added the cold milk

added the cream and answered to cool in the fridge for half an hour

poured everything into an ice cream maker and operated for about 18 minutes. and see what a result!

a sight just looking at it! creamy! but it didn't end here. I took the Kroccant and poured it down on the ice cream

mix and serve in bowls if you eat immediately otherwise put in the freezer!

I poured more kroccant on top and accompanied with a wafer! easy to do and guaranteed result.
